Spicy Shrimp with Rice Paper Chips is a crispy and flavorful Asian-inspired appetizer that features juicy shrimp coated in a spicy sweet and tangy sauce, served over crunchy rice paper chips. This easy and fun dish is perfect for entertaining guests or enjoying as a tasty snack.

Ingredients

Spicy Shrimp

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp sweet chili sauce
  • 1 tsp sriracha
  • 1 tsp lime juice
  • 1 tsp sesame oil
  • 1/2 tsp grated fresh ginger
  • 1 green onion, sliced

Rice Paper Chips

  • 6 rice paper wrappers
  • 1 tbsp sesame seeds
  • Cooking spray or vegetable oil
  • Pinch of salt

Instructions

  1. Preheat the Oven or Air Fryer: Set your oven or air fryer to 375°F (190°C) to prepare for cooking the rice paper chips.
  2. Prepare Rice Paper Chips: Cut each rice paper wrapper into triangles or smaller pieces. Lightly spray them with oil and sprinkle with sesame seeds and a pinch of salt for added flavor.
  3. Cook the Rice Paper Chips: Place the coated rice paper pieces on a baking sheet or air fryer basket. Bake for 3–5 minutes in the oven or air fry for 1–2 minutes, watching carefully until the chips puff up and become crispy.
  4. Make the Spicy Sauce: In a small bowl, whisk together soy sauce, sweet chili sauce, sriracha, lime juice, sesame oil, and grated fresh ginger to create the flavorful sauce for the shrimp.
  5. Cook the Shrimp: Heat vegetable oil in a skillet over medium-high heat. Add the shrimp and minced garlic, cooking for 2–3 minutes on each side until the shrimp turn pink and are cooked through.
  6. Coat the Shrimp with Sauce: Pour the prepared spicy sauce into the skillet with the cooked shrimp. Toss everything together for 1–2 minutes until the shrimp are glossy and fully coated with the sauce.
  7. Garnish and Serve: Sprinkle sliced green onions over the shrimp. Serve the spicy shrimp immediately with the crispy rice paper chips on the side for a delightful appetizer.

Notes

  • Rice paper chips cook very quickly, so keep a close eye on them to prevent burning.
  • Adjust the amount of sriracha in the sauce to match your preferred spice level.
  • Add fresh toppings like avocado, cucumber, or cilantro to complement the dish.
  • For extra crunch and flavor, sprinkle crushed peanuts over the finished shrimp.
