Ingredients
Cake
- 2 cups all-purpose flour
- 1½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 2 large eggs
- 1 tbsp lime zest
- 1 tbsp lemon zest
- ½ cup orange juice
- ¼ cup lime juice
- ½ cup plain yogurt
- 1 tsp vanilla extract
Citrus Glaze
- 1 cup powdered sugar
- 2–3 tbsp fresh lime juice
- 1 tsp lemon zest
Instructions
- Preheat and prepare pan: Preheat your oven to 175°C (350°F). Grease and line an 8-inch round cake pan to prevent sticking and ensure easy removal after baking.
- Mix dry ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt to evenly distribute the leavening agents and salt.
- Cream butter and sugar: In a separate large bowl, beat the softened butter and granulated sugar until the mixture is light and fluffy, which helps to create a tender cake texture.
- Add eggs: Add the eggs one at a time to the butter-sugar mixture, beating well after each addition for a smooth and homogenous batter.
- Incorporate citrus and liquids: Stir in the lime zest, lemon zest, orange juice, lime juice, plain yogurt, and vanilla extract, blending the citrus flavors thoroughly throughout the batter.
- Combine wet and dry: Gradually fold the dry ingredients into the wet ingredients using a spatula, mixing just until combined to avoid overworking the batter and to keep the cake tender.
- Pour and bake: Pour the batter into the prepared cake pan and smooth the top evenly. Bake in the preheated oven for 30–35 minutes or until a toothpick inserted into the center comes out clean.
- Cool the cake: Remove the cake from the oven and allow it to cool completely in the pan placed on a wire rack before adding the glaze.
- Prepare and apply glaze: Mix the powdered sugar, fresh lime juice, and lemon zest together until smooth. Drizzle the glaze evenly over the cooled cake just before serving to add a tangy, sweet finishing touch.
