Ingredients
Chicken
- 1½ lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 teaspoon grated fresh ginger
Teriyaki Sauce
- ½ cup low-sodium soy sauce
- ¼ cup honey
- 2 tablespoons brown sugar
- 2 tablespoons rice vinegar
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch
- 2 tablespoons water
For Garnish
- Sesame seeds
- Sliced green onions
Instructions
- Heat the oil: In a skillet, heat 2 tablespoons of vegetable oil over medium-high heat, preparing the pan for cooking the chicken evenly.
- Cook the chicken: Add the bite-sized chicken pieces to the skillet and cook them until they are browned on all sides and cooked through, about 6-8 minutes.
- Add garlic and ginger: Stir in the minced garlic and grated fresh ginger with the chicken, cooking for another 30 seconds to release their aromatic flavors.
- Prepare the sauce: In a separate bowl, whisk together ½ cup low-sodium soy sauce, ¼ cup honey, 2 tablespoons brown sugar, 2 tablespoons rice vinegar, 1 teaspoon sesame oil, 1 tablespoon cornstarch, and 2 tablespoons water until smooth.
- Simmer the sauce: Pour the teriyaki sauce mixture over the cooked chicken in the skillet, then reduce the heat slightly and simmer. Stir constantly until the sauce thickens and evenly coats the chicken, about 3–5 minutes.
- Finish and garnish: Once the chicken is well coated in the glossy sauce, remove from heat. Sprinkle sesame seeds and sliced green onions on top for added flavor and presentation.
