Ingredients
Main Batter
- 1 1/2 cups all-purpose flour
- 1 cup grated carrots
- 3/4 cup sugar
- 1/2 cup vegetable oil

Instructions
- Preheat and Prepare Pan: Preheat your oven to 180°C (350°F) and grease a loaf pan thoroughly to prevent sticking during baking.
- Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, cinnamon, and ground ginger. Whisk them together evenly to incorporate all the spices and leavening agents.
- Mix Wet Ingredients: In a separate bowl, whisk the eggs, sugar, vegetable oil, and milk until well combined and smooth to form the wet mixture.
- Combine Wet and Dry: Gradually add the wet mixture to the dry ingredients, stirring gently to combine. Then carefully fold in the grated carrots to evenly distribute them throughout the batter without overmixing.
- Layer Batter and Swirl: Pour half of the prepared batter into the greased loaf pan. Sprinkle half of the swirl mixture made from brown sugar, ground ginger, and chopped nuts or oats evenly over the batter. Repeat by layering the remaining batter followed by the rest of the swirl mixture on top.
- Bake Bread: Place the loaf pan in the preheated oven and bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean and the top is firm and golden brown.
- Cool and Serve: Remove the loaf from the oven and allow it to cool in the pan for about 10 minutes. Then transfer the bread to a wire rack to cool completely before slicing for clean, even pieces.
