Ingredients

Chicken and Vegetables

Teriyaki Sauce

Instructions

  1. Prepare teriyaki sauce. In a small bowl, whisk together soy sauce, honey, water, rice vinegar, and sesame oil until fully combined.
  2. Mix cornstarch slurry. In a separate small bowl, combine cornstarch with 1 tablespoon cold water and stir to dissolve completely.
  3. Cook chicken. Heat vegetable oil in a large skillet over medium-high heat. Add diced chicken and cook for 6 to 8 minutes, stirring occasionally until the chicken is golden brown and cooked through.
  4. Add aromatics. Add minced garlic and grated ginger to the skillet and cook stirring for 30 seconds to release their flavors without burning.
  5. Simmer with sauce. Pour the prepared teriyaki sauce over the chicken, bringing it to a gentle simmer on medium heat.
  6. Thicken sauce. Stir in the cornstarch mixture and cook for 1 to 2 minutes, stirring continuously until the sauce thickens and becomes glossy, coating the chicken evenly.
  7. Cook vegetables. While the sauce thickens, steam or sauté the broccoli florets and shredded carrots lightly until just tender-crisp to maintain their bright color and crunch.
  8. Assemble bowls. Divide the cooked jasmine rice evenly into four bowls, then top each with the teriyaki chicken and cooked vegetables.
  9. Garnish and serve. Add sliced cucumber, green onions, and sprinkle sesame seeds on top of each bowl for added freshness and texture. Serve immediately.
