Instructions
- Prepare teriyaki sauce. In a small bowl, whisk together soy sauce, honey, water, rice vinegar, and sesame oil until fully combined.
- Mix cornstarch slurry. In a separate small bowl, combine cornstarch with 1 tablespoon cold water and stir to dissolve completely.
- Cook chicken. Heat vegetable oil in a large skillet over medium-high heat. Add diced chicken and cook for 6 to 8 minutes, stirring occasionally until the chicken is golden brown and cooked through.
- Add aromatics. Add minced garlic and grated ginger to the skillet and cook stirring for 30 seconds to release their flavors without burning.
- Simmer with sauce. Pour the prepared teriyaki sauce over the chicken, bringing it to a gentle simmer on medium heat.
- Thicken sauce. Stir in the cornstarch mixture and cook for 1 to 2 minutes, stirring continuously until the sauce thickens and becomes glossy, coating the chicken evenly.
- Cook vegetables. While the sauce thickens, steam or sauté the broccoli florets and shredded carrots lightly until just tender-crisp to maintain their bright color and crunch.
- Assemble bowls. Divide the cooked jasmine rice evenly into four bowls, then top each with the teriyaki chicken and cooked vegetables.
- Garnish and serve. Add sliced cucumber, green onions, and sprinkle sesame seeds on top of each bowl for added freshness and texture. Serve immediately.
