- 2 cups cooked jasmine or brown rice
Vegetables and Toppings
- 1 avocado, sliced
- 1/2 cucumber, sliced
- 1/2 cup shredded carrots
- 1/2 cup edamame
- 2 green onions, sliced
- 1 tbsp sesame seeds
Poke Sauce
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp honey
- 1 tsp grated fresh ginger
- 1 tsp lime juice
- 1/2 tsp chili flakes (optional)
Instructions
- Prepare the Sauce: In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, grated fresh ginger, lime juice, and chili flakes (if using) until well combined to create a flavorful poke sauce.
- Marinate the Tuna: Place the cubed ahi tuna in a medium bowl and gently toss with about two-thirds of the prepared poke sauce to coat evenly. Cover and refrigerate to marinate for 10 to 15 minutes, allowing the flavors to infuse.
- Assemble the Base: Divide the cooked jasmine or brown rice evenly among four serving bowls as the foundation of your poke bowl.
- Add Vegetables: Artistically arrange the sliced avocado, cucumber, shredded carrots, and edamame around the rice in each bowl to add crunch, creaminess, and vibrant color.
- Add Marinated Tuna: Place the marinated ahi tuna atop the rice and vegetables in each bowl carefully, ensuring an even distribution of the protein.
- Drizzle Remaining Sauce & Garnish: Drizzle the remaining poke sauce over the assembled bowls, then garnish with sliced green onions and sprinkle with sesame seeds to finish. Serve immediately to enjoy the freshness.
