Ingredients
For the Salad
- 2 boneless skinless chicken breasts
- 1 tbsp olive oil
- ½ tsp garlic powder
- ½ tsp paprika
- Salt and black pepper, to taste
- 4 cups mixed greens
- 1 cup cooked quinoa
- 1 cup fresh pineapple chunks
- 1 red bell pepper, diced
- ½ cucumber, sliced
- ¼ cup red onion, thinly sliced

- 3 tbsp olive oil
- 2 tbsp lime juice
- 1 tsp honey
- Salt and pepper, to taste
Instructions
- Season the chicken: In a small bowl, coat the chicken breasts evenly with olive oil, garlic powder, paprika, salt, and black pepper to infuse flavor before grilling.
- Grill the chicken: Preheat the grill to medium-high heat and cook the chicken breasts for 5–6 minutes on each side or until they reach an internal temperature of 165°F (74°C) and are fully cooked through.
- Rest and slice the chicken: Remove the chicken from the grill and let it rest for 5 minutes to retain its juices, then slice it into bite-sized pieces for the salad.
- Prepare the salad base: In a large mixing bowl, combine the mixed greens, cooked quinoa, pineapple chunks, diced red bell pepper, sliced cucumber, and thinly sliced red onion to create a colorful and textured foundation.
- Make the dressing: Whisk together the olive oil, lime juice, honey, salt, and pepper in a small bowl until well combined for a light and citrusy dressing.
- Assemble the salad: Add the sliced grilled chicken to the bowl with the salad ingredients and drizzle with the prepared dressing.
- Toss and serve: Gently toss all the ingredients together to evenly coat them with the dressing and serve the salad immediately for the freshest flavor.
