This Vegan Lobster Roll offers the delicious and classic flavors of a New England lobster roll using hearts of palm as a perfect, plant-based seafood substitute. Combined with a creamy dairy-free dressing, fresh herbs, and Old Bay seasoning, this sandwich is toasted to golden perfection for a fresh, flavorful, and entirely vegan meal.
Ingredients
For the Filling
- 2 (14-ounce) cans hearts of palm, drained and chopped
- ¼ cup vegan mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon Old Bay seasoning
- 1 celery stalk, finely diced
- 2 tablespoons chopped chives
- 1 tablespoon fresh parsley, chopped
- Salt and black pepper to taste
For the Sandwich
- 4 split-top hot dog buns
- 2 tablespoons vegan butter
- Lettuce leaves (optional)
Instructions
- Prepare Hearts of Palm: Pat the hearts of palm dry with paper towels and chop them into bite-sized pieces to resemble lobster meat texture.
- Make Dressing: In a mixing bowl, whisk together vegan mayonnaise, lemon juice, Dijon mustard, and Old Bay seasoning until fully combined and creamy.
- Combine Filling: Gently fold the chopped hearts of palm, diced celery, chopped chives, fresh parsley, salt, and black pepper into the dressing, ensuring even coating.
- Chill Filling: Cover and refrigerate the mixture for at least 20 minutes to allow the flavors to meld and the filling to chill properly.
- Toast Buns: Spread vegan butter evenly on the outside of each split-top hot dog bun. Heat a skillet over medium heat and toast the buns butter-side down until they are golden brown and slightly crispy.
- Assemble Sandwiches: Optionally, line each toasted bun with crisp lettuce leaves. Spoon a generous amount of the chilled vegan lobster filling into each bun.
- Garnish and Serve: Garnish the sandwiches with extra chopped chives and serve alongside lemon wedges for squeezing over the filling if desired.
Notes
- Artichoke hearts can replace part of the hearts of palm to add different texture and flavor.
- Chilling the filling for at least 20 minutes enhances the flavors and texture.
- Serve these sandwiches with potato chips or fries for a classic meal experience.
- Store the filling separately in an airtight container in the refrigerator for up to 3 days.
