Description

This vegetarian quiche is a delicious and wholesome dish featuring a flaky pie crust filled with sautéed vegetables, fresh spinach, a creamy egg and milk mixture, and melted cheddar cheese. It is baked to perfection, making it an ideal choice for brunch, lunch, or a light dinner.

Ingredients

Pie Crust

  • 1 prepared pie crust

Filling

  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 cup spinach, chopped
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the quiche.
  2. Sauté Vegetables: Heat 1 tablespoon olive oil in a skillet over medium heat. Add the diced onion and bell pepper, sautéing until they are softened and fragrant, about 5-7 minutes.
  3. Prepare Crust: Spread the sautéed vegetables along with the chopped spinach evenly over the bottom of the prepared pie crust in your quiche or pie dish.
  4. Mix Filling: In a mixing bowl, whisk together 6 large eggs, 1 cup milk, ½ teaspoon salt, and ¼ teaspoon black pepper until fully combined and slightly frothy.
  5. Assemble Quiche: Pour the egg mixture over the vegetables in the pie crust. Sprinkle the shredded cheddar cheese evenly on top of the quiche filling.
  6. Bake: Place the quiche in the preheated oven and bake for 35–40 minutes, or until the center is set and the top is lightly golden. A knife inserted in the center should come out clean.
  7. Cool and Serve: Remove the quiche from the oven and let it cool for at least 10 minutes before slicing. Serve warm or at room temperature.

Notes

  • Add mushrooms, zucchini, or broccoli for extra vegetables and enhanced flavor.
  • The quiche can be served warm or at room temperature, making it versatile for any meal occasion.
