Description

This White Bean & Avocado Sandwich is creamy, hearty, and full of fresh Mediterranean-inspired flavors. Made with mashed white beans, ripe avocado, lemon juice, fresh herbs, and crunchy vegetables, it’s a delicious plant-based sandwich that’s perfect for a quick lunch or satisfying meal. Easy to prepare with simple ingredients, it’s both nutritious and flavorful.

Ingredients

Sandwich Filling

  • 1 can (15 oz) cannellini or great northern beans, drained and rinsed
  • 1 ripe avocado
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper, to taste
  • 1 teaspoon Dijon mustard (optional)

Sandwich Assembly

  • 4 slices whole grain or sourdough bread
  • ½ cucumber, thinly sliced
  • 1 small tomato, sliced
  • ½ cup fresh spinach or arugula
  • 2 tablespoons red onion, thinly sliced

Instructions

  1. Prepare the Beans: Drain and rinse the white beans thoroughly to remove excess liquid and ensure a clean flavor.
  2. Mash Beans and Avocado: Place the beans in a medium bowl and mash them with a fork, leaving some texture for bite. Add the ripe avocado, fresh lemon juice, olive oil, garlic powder, chopped fresh parsley, salt, and black pepper. Mash and mix everything together until creamy but still slightly chunky.
  3. Toast the Bread: Toast the bread slices lightly if you prefer a crunchier texture and enhanced flavor.
  4. Spread Mustard: Spread Dijon mustard over the toasted bread slices if using, to add a mild tangy layer of flavor.
  5. Assemble the Sandwich: Divide the white bean and avocado mixture evenly onto two slices of bread. Layer thinly sliced cucumber, tomato, fresh spinach or arugula, and red onion over the filling.
  6. Complete the Sandwich: Top with the remaining bread slices and gently press the sandwich together to hold all ingredients in place.
  7. Serve: Cut the sandwiches in half diagonally or vertically and serve immediately for the freshest taste and texture.

Notes

  • Cannellini beans, navy beans, or great northern beans all work well for this recipe.
  • Leave some beans whole when mashing to add a chunkier texture to the sandwich filling.
  • For added flavor, consider adding crumbled feta cheese, sprouts, or roasted red peppers.
  • For a spicy kick, sprinkle in red pepper flakes or mix in a little hot sauce.
  • Use freshly squeezed lemon juice to help keep the avocado fresh and prevent browning.
  • Store leftover bean and avocado filling in an airtight container in the refrigerator for up to one day. Press plastic wrap directly against the surface to minimize browning.
