Ingredients
Fritters
- 2 medium zucchini, grated
- 1 teaspoon salt
- 2 eggs
- ½ cup all-purpose flour
- ¼ cup grated Parmesan cheese
- 2 tablespoons chopped parsley
- 2 green onions, sliced
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- 2 tablespoons olive oil
Garlic Yogurt Dip
- 1 cup plain Greek yogurt
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon chopped dill
- Salt and pepper to taste
Instructions
- Prepare Zucchini: Sprinkle the grated zucchini with salt and let it sit for 10 minutes to draw out excess moisture.
- Remove Moisture: After resting, squeeze the zucchini thoroughly to remove as much water as possible to ensure crisp fritters.
- Make Batter: In a mixing bowl, combine the zucchini with eggs, flour, grated Parmesan, chopped parsley, sliced green onions, garlic powder, and black pepper. Mix until well combined.
- Heat Oil: Heat the olive oil in a skillet over medium heat to the right temperature for frying.
- Cook Fritters: Drop spoonfuls of the batter into the skillet and flatten each slightly with the back of the spoon. Cook each fritter for 3–4 minutes per side, or until they are golden brown and crispy.
- Make Dip: While the fritters cook, stir together the Greek yogurt, minced garlic, lemon juice, chopped dill, and salt and pepper to taste in a small bowl.
- Serve: Plate the warm fritters and serve immediately with the garlic yogurt dip for the best texture and flavor.
Notes
- Be sure to remove as much moisture from the zucchini as possible to avoid soggy fritters.
- Serve the fritters immediately after cooking for the crispiest texture.
- Leftover fritters can be refrigerated for up to 3 days and reheated gently before serving.
